There is always this excitement on the first day of classes…for some reason, school seems interesting and full of possibility on that first day…but quickly fades. I'm hoping that this year, things will be different, and wherever you fit in within the education systems, I hope your year continues to be full of possibility and enrichment.
Education is something we are blessed with in America…we have such easily accessible educational systems that we often take the opportunity for granted. This year, love what you do, and remember how lucky you are. Make the most of this school year, and be grateful for the opportunity that you have that so many others don't!
I am starting more grad classes today, so I like to think of myself as being a part of the excitement on SRU's campus as the year starts, though I obviously am far from it.
In addition to being grateful for education, I'm feeling extremely grateful about this quick little recipe. It is seriously amazing, and takes a total of five minutes and five ingredients to make. Plus, it is sweet, a bit indulgent, and perfect for this hot august day as you celebrate your accomplishment of completing the first day of the school year. Also, definitely dorm room friendly!
Cookie Dough Mug Cake
Ingredients:
1/3 Cup of flour (I used whole wheat)
3 Tbsp Brown Sugar (I used only two)
1 egg
1 Tbsp butter
Chocolate Chips - Optional, and however many you'd like
Vanilla Ice Cream- Optional, but strongly suggested
Most people probably have the ingredients to make this happen sitting in their cupboard and refrigerator on a daily basis. Here's your very simple steps:
1. Mix together flour, brown sugar, egg chocolate chips and butter in a large mug. I used a fork to make sure everything was evenly mixed.
2. Microwave for about 1 minute. The original recipe says 1 and 1/2 minutes, but the gooier the better with this treat!
3. Top with vanilla ice cream (a generous amount, please!)
4. Eat slowly and enjoy every minute of your masterpiece.
Suggestion: Using a cute mug will always make you happier.
Mug cakes are individual servings, so it is all for you!
This may not be the healthiest treat, but it definitely isn't terrible. You can experiment and modify the recipe even more to make it healthier, but I personally just used whole wheat flour and less sugar (which still was delicious, there really is no reason for that third tablespoon of sugar).
Nick honestly couldn't believe something so delicious was prepared and made within five minutes. I have to admit, it was delicious. You should make this and tell me how it was, or give me some suggestions on making it even better/ using other ingredient substitutes to make it a healthier treats!
So fire up your microwave, friends, and make yourself a delicious mug cake, take a seat, sit back, and indulge!
